When you apply a coupon to an order, the following transaction is created or combined with the original sales transaction (depending on when the order was saved):
DR ORD_COUPON.Discount_Account
CR Accounts Receivable
The sales tax is charged on the Revenue account even though the transaction is against the AR account. For some organizations, the Discount account can be an asset account.
